8 Days of Christmas, part four

Hi and welcome to Day Four! Can you believe there are just five days until Christmas? AAAAHHHH!!! I have so much to finish, I don’t know where to begin…

On today’s agenda, I think I am going to continue wrapping gifts and then I might do some cookie baking, which is a BIG tradition in my family. My hubby’s favorite cookies are these light and delicious “Christmas Meringues” which his grandma used to make him every year. Sadly, my DH’s grandma died just a few months before I met my husband. She was an important part of his life and he really loved and admired her. I wish I had a chance to know her… but, I am thrilled I can continue one of her traditions and make the cookies her beloved grandson loves so much!

    Didn’t even read my sentiment before I got greedy for my download. I absolutely love sugar cookies at Christmas. They have to be thick and soft and have a heavy layer of cream cheese frosting. Then, I love to make them pretty with sugars and sprinkles. Do I leave the recipe?

    Mom’s Sugar Cookies

    3 Cups flour
    1 1/2 tsp baking powder
    1/2 tsp salt
    1 cup sugar
    Combine dry ingredients in mixer then add:
    1 Cup (2 sticks) SOFTENED BUTTER {nothing else with do}
    After the butter is combined, add:
    1 egg, slightly beaten
    3 TBS canned milk
    1tsp. vanilla
    {I put all of these in a bowl and mix them all together then add it slowly at once.}
    Mix until well combined. Taste a few bites to make sure it is yummy. Pass the beaters around to the kiddies, taste a few more licks, then cover and put in the fridge for a few hours.

    Bake at 400 degrees for 5-8 minutes. DO NOT OVER COOK.

    Oh T do I get bonus points if I drop you off some samples…. I love a lot of cookies but this one makes the best chocolate chip cookies!!!
    Chocolate Chip Cookies
    Found in Nestles No. 28 Page 14 WPS 37500
    •1 ¼ cups All purpose flour
    •½ teaspoon Baking soda
    •¼ teaspoon Salt
    •½ cup (1 stick)Soften butter
    •½ cup Brown sugar (firmly packed)
    •¼ cup White sugar
    •1 Egg
    •1 teaspoon Vanilla extract
    •1 pkg. Semi-sweet chips
    •½ pkg. Milk chocolate chips
    any extras you love 1 cup nuts or m&ms
    Oven 375⁰
    •Cream butter & sugars & salt
    •Beat in egg & vanilla
    •slowly add flour
    •(stir) in chips
    Bake 12 – 15 min.
    These cookies do not spread when baking.
    I double the recipe, dough can be made and frozen, then thaw
    Move onto brown paper bags to absorb grease, move around

    Thanks so much for Days 3 & 4 Tracy…I’m loving this kit.
    My favorite cookie recipe is for Icebox Cookies.

    1. 2 cups soft, butter-flavored shortening
    2. 1 cup sugar
    3. 1 cup brown sugar
    4. 4 eggs
    5. 1 Tbsp. vanilla
    6. 5 1/2 cups flour
    7. 1 tsp. baking soda
    8. 2 tsp. salt
    9. 2 cups chopped walnuts or pecans
    Mix first 5 ingredients together thoroughly.

    Stir in flour, baking soda and salt until well combined.
    Add nuts and mix.
    Portion the dough into at least 4 parts, roll each part into a log shape and wrap up in waxed paper, twisting ends closed.
    Place wrapped logs into refrigerator and/or freezer until firm.

    When ready to bake, unroll from paper and slice 1/4 inch thick while still cold and firm.
    Place cut side down on ungreased baking sheet. Bake @ 375 for 8 to 10 minutes, depending on your oven.
    Cool on wire racks and eat…yum!

    I don’t frost mine ’cause I just love the nut flavor so much but you could pretty them up for the holidays.

    I also don’t know how many this makes as I’ve never baked an entire batch at once. I leave them in the freezer and slice and bake as needed, but you do get a lot of cookies.

    I love white chocolate peanut butter crackers. Real easy, you take ritz crackers, and put PB in the middle. Dip them in melted white chocolate and harden on wax paper. I add red & green sprinkles on top before they dry to make them more Christmasy. They are yummy.

    Thanks a bunch for the kit…it’s so cute! Here’s a favorite cookie recipe from my family – my grandmother used to make these – our family loves coconut!

    Krunchie Cookies

    1 cup Butter – softened
    1 cup Sugar
    1 cup Brown Sugar
    2 eggs
    2 cup Flour
    1 tsp Baking soda
    1/2 tsp Baking powder
    1/2 tsp Salt
    1 tsp Vanilla
    2 cups Quick Oats
    2 cups Corn Flakes
    1 cup Coconut

    Cream butter, sugar & eggs. Mix dry ingredients together. Add dry ingredients slowly to wet until combined. Mold the batter into walnut sized balls & place on cookie sheet. Press down with the bottom of a glass dipped in sugar to flatten. Bake 10-12 minutes at 350 degrees.

    A recipe from my MIL has become my favorite:

    Orange Slice Cookies
    1 pkg (12 oz) candy orange slices
    1 1/2 cups flour
    2/3 cup shortening
    2/3 cup granulated sugar
    2/3 cup brown sugar
    1/2 tsp baking powder
    1/2 tsp baking soda
    1/2 tsp salt
    2 eggs
    1 tsp vanilla
    1/2 cup quick cooking oats
    1 cup coconut (optional)

    Cut orange slices in small pieces. Sift together dry ingredients. Cream shortening and sugar. Beat in eggs and vanilla, stir in dry ingredients and oats, coconut and orange slices. Mix well. Bake at 375 for 10-12 minutes.
